Low priced item's will typically sell in higher frequencies than higher value items, but generally there will be always be buyers as eBay is such an extensive marketplace.
Depending on your account selling limits, you should base your price accordingly. Ie. 1000/£10000. for example would leave an average sale price of £10, and your account will obviously influence how much you will be able to sell but obviously you won't have to sell all of your 1000. It's up to you!
Some services provide daily traffic on certain products, and recent trends or spikes in certain categories but I don't think they're open source.
Starting off with smaller products will generally tend for a smoother selling experience, as it's essential you don't get suspended.
Generally looking at other's listings will be a quick way of looking up if what you want to sell is hot.
