I'm not sure what you mean exactly by a "stealth website".
If you mean "private" keep in mind that's fine so long as you comply with the web hosts Terms of Service, and otherwise don't host anything illegal in the jurisdiction were the server is located.
One thing I wanted to mention is be careful with a company like GoDaddy. They are a bit sensitive to complaints and will act by suspending your domain or site even with a single complaint.
Several years we had an unfortunate incident whereby GoDaddy suspended the main domain name of our company website which took down hundreds of domains managed by us. These were customer domains which used our DNS name servers.
GoDaddy received a single spam complaint about one of our customers who had a server in our colo center, on a machine we didn't even have access to. Since our domain was with GD, they suspended it since we provided network service for that customer. As someone who has worked in this industry a long time, this company is quick to take action if they don't like what you are doing.
There is more to staying private than using the registrars WHOIS privacy setting. I would be more mindful of running afoul of your web hosts (or domain registrars) ToS/AUP. This is especially true if you are hosting controversial content, adult material, or something that may be illegal in some countries.
