When you send an echeck, or do anything where you use your bank as the funding source, I believe that Paypal would see something similar like "YourNameOnTheBankAccount paypal payment1234".
They definitely can't see the name during normal circumstances though. That's why Paypal (and any other website when adding an external bank account) requires you to confirm the bank account is really yours by doing trial deposits or giving your log in info.
