My account is now poor health on amazon because i accidentally listed 10 items i did not have and when people bought them i had to cancel the order, thus turning my account health into poor.
What will happen if my account stays poor? Will amazon suspend me?
If so how many days after the account turned poor?

you never cancel orders even if you lose 10 dollars . if you don't have the item in this situation drop ship them from ebay or get an amazon prime account buy through amazon and have them shipped to your customer . if they didn't suspend you then you need to be extra careful and ship your items out next day bring those metrics back up
I am pretty sure your are going to hear from them in regards to those orders. Amazon is the hardest market place to keep those metrics up. I usually do exactly that and buy the products and ship them to my customer. It will NOT be worth losing your account.
10 orders is really a bunch. I don't know if it is the same product. But I always keep much more inventory on hand than I have listed on any site eBay or Amazon. Giving me a buffer just in case. You sell a few then you add more inventory. For me sometimes people need to exchange sizing so it is always nice good practice to hold some goods off to the side.
In this type of situation I would advise trying to source or drop ship from another place.

your lucky stop selling items you don't have or becareful what you list .. infact do this go buy 30 books from amazon 1 book that is top seller under 8 bucks and sell them to help with your metrics you should sell out in 2 days depending on your feedback.
from my experiences, you get 2 appeals from suspensions and the 3rd, you're out permanently. If this is the first, you should be fine. Make sure you have a plan to get out of the hole next month and get some back up accounts ready. Being proactive and learning from mistakes is the best thing you can do for your accounts.
