From a "making money" perspective running 2 dozen eBay VM's at the same time is the only thing I can think of...

Depends on your definition of 'a lot'.

The only things I would think of that justify such a high RAM usage would be graphic intensive apps, such as Photoshop (in ultra high definition), and Gaming (again, ultra high definition) + multiple monitor setup. Even then, there would be strain on other components in your machine if it isn't not on par with the RAM (i.e. better processor), otherwise you'll just be bottle necking the potential.

For stealth, even if your using it for VMware, its OTT as there are more efficient ways around using stealth with lower levels of RAM.

Actually even for gaming you dont realy need that much RAM.
I run a 3 monitor setup - 1440 X 2560 ones - with a 1080ti. The majority of the work falls on the graphics card. I do run it with 32gb of RAM and even that is overkill.
