There's no magic number to avoid. Paypal doesn't automatically limit someone if they have $1000 sitting in their account.

I sell expensive items that range from a few hundred to a few thousand...

Basically your only choice is to use an EIN. You'll need to start a company and get an EIN from the IRS. Once you do that you can upgrade your Paypal account to a business account and enter that EIN....

"Too many" only really becomes a problem if it's done in rapid succession. There's a huge difference between 40 bank accounts spread across 10 years vs 40 accounts spread across 1 month, for example....
