Tax Question for Europe eBay Selling

Hi, I am really confused about something.

Suppose I have a company in Europe and I want to sell on eBay with a stealth account.

How do I go about exactly in order to properly do my taxes for what I sell and be able to show to the tax authorities the actual invoices for each item sold?
