If you just sort the quantity, this would take you less than 10 minutes to resolve, no? So whats the issue? An automated process kind of negates the point.
Assuming all items sold out just automatically update afterwards, don't you think that might piss off someone? Or make them question the item they bought?
Normally what I do is keep 1 quantity, sometimes more depending the item, when it sells out I like to wait 2 weeks, then update. I sell on various marketplaces as well so it's not like the item can never sell again. But if I'm thinking from a customer perspective, they're most likely to check the listing shortly after buying, or after delivery. Not again a week later, unless they're upset.
Keeping the item quantity scarce, especially when its variation listing and they can see items have sold, or sold recently it automatically increases demand. I've seen it so many times. You sell one item, then shortly after sell another from the same listing. Strictly because the customer sees that notification on the listing someone else bought, only one left in stock in the variation they want, increases urgency by default.
