So, how many stealth accounts do you guys have? I'm starting to create more accounts just in case I lose quite a few in one go - just wanted to see how many I would need to cover myself.

The more the better really.
I go with 1:2 ratio.
Loosing a big account is a real PITA, thankfully does not often happen, but it is also a great idea to have something in store to replace it.

Always good to have as many as possible, many of us have been in the situation where an account has gone down and we don't have a good account to replace. I recommend making some transactions on those backup accounts so Paypal/EBay have some transaction history for when you fire it up

Having reserve accounts is great, but to prepare them, you must have some ACTIVITY on them. Browsing history, buying, etc. Then I turn them into seller accounts and sell the limit (if the account has a low limit, like 5/500) using low risk, cheaper items.
I keep selling on these accounts, miscellaneous merchandise, all low risk. That way, if you need it to replace a good, going account it will be ready.
You can't just hold onto 5 accounts for months or years with no activity and expect to sell from day one on it in any type of volume. So, the preparation is important.

I think it's safe to say that once you lose your real account, it's like a shock to the system and unless you are well prepared for it, it take really affect the way you turn over the stock and it also affects the daily routines of running a business.
This shock should always stay at the back of your mind and keep you motivated to create more stealths and more importantly, keep the stealths going and healthy.
I personally have quite a few accounts that I sell on and I also have exactly the same amount of stealth accounts that I keep ticking over slowly, but very surely. With reserve accounts, it's not about money- On some transactions I even lose few pennis, but it's important to create a steady transaction history that is strong, healthy and very low risk because you never know when you need to take that account and really start selling on it.
The shock of losing an account is that keeps me on my toes and I guess with time, and having many other accounts, the loss of an account can become easier due to circumstances, but the fear of losing one should never leave you- It's a great motivator.
Obvsiously there are differences in UK and US stealth operations and in some ways it's less of a loss in US, but it's a loss nevertheless.
As with normal stealth accounts- it's not so much about the quantity of the accounts. It's more about the quality of the accounts.

I like to keep around 25+ active. And if one goes down, I like to replace it with a couple more. Fortunately, this doesn't happen often.

Right now I have 45 accounts and 5 actives. Question for sellers, do you keep the sleepers active with random browsing and selling of simple items, or do you just let it age without using it?

And also order some 99p items from China to create some transaction history.
