Does amazon link you if you use +1 at the end of your email for new accounts?

As title says,

If I was to create another buyers amazon account and instead of usinng the same email like:

johndoe0@gmail.com

I use:

johndoe0+1@gmail.com

Would they link the profiles?

No, if emails are different there is no link

there are many other factors that play a role in linking accounts...

While the e-mails are indeed different and separate, it would be wiser not to make them look too close

I haven't used the +1 approach but I have used services which generate multiple email addresses around your main/chosen address without issue.

No need to risk it, just use unique emails for each shop

If you want to make things easy just have each email forward the emails to 1 main
