MONERO Block Height Sync Question.

It there anyway to get around storing the whole block chain? I tried deleting my VM, OS, and wallet and starting over using the seed and starting with restore height of 1,350,000 but it still seems to be syncing the whole block chain.

Is it safe to use a remote node like moneroworld.com?
