I dont understand what you mean by stealth vs real. Are you just talking about your info to setup an account? It doesnt really matter if you use your stealth or your real info. The problem is most of us have had accounts using our real info which has gotten suspended so we need to make new accounts. We cant use our real info so we go stealth..
Real account with real infos is pretty easy to use. I had a genuine account and never bother about IP, address phone number. That account was hijacked once and I got it back from eBay in less than 2 days with absolutely no troubles.
Then I started selling arguable goods... or foo-foo items, as you like.
And that was it. Banned forever.
Now I have to use stealth and I see the advantages of it but it brings also much more effort to use it properly.
The questions you have to answer are:
what kind of business profile I'd like to keep?
What am I going to sell?

All stealth account work their best to pretend being "real person info account".
Therefore, you can understand what is better.
Though, it depends on your intentions,
You can get much faster on high limits with mass stealth accounts.
Technically, there is no difference. But lots of people loose their accs for a very silly reason (bad buyers, Royal Mail lost loads of items in a short period of time etc.), so they are forced to use stealth accounts.

Bottom line, if you want to be in the eBay game for the long haul, you need to go stealth. eBay and Paypal are too unpredictable, you always need backup accounts ready.

real is the best but if you get banned your screwed
