Will eBay find out if I edit some images or documents? If so, what are they scanning those files with?

Will they find out if I modify a PDF from a supplier? like some text etc

Use something that retains font type, and you should be fine.

that depends on the purpose of what you want to do. stealth docs can be done in a way that does not allow to see much if anything at all.

however , all this would not work with ebay MP if checked by Adyen because Adyen do not care much whether the docs are edited or not.

It would work with payoneer though
