Yes you can.....just need to follow stealth rules and it should work.

Etsy doesn't actually see the EIN info....what Etsy does is request to see if the EIN and the info you provided match, if the response is "Do Not Match" then it creates a problem.

Ohhhh! Okay. So if they get a "Does Not Match" response that's when they ask for an ID or some proof of identity and stuff? Sorry if these questions seem dumb and repetitive: I just want to make sure I'm understanding right so I know what to do.
