Just wondering if anyone knows if I can use an apartment as a stealth address? If so, do I use the suite address along with the address, and can the name be stealth?

Using apt. number or not does not make any difference for them.

All info you will enter will be verified by 3rd party software. Depending on data match results you'll get an error while registering or it will pass through.
