I'd say less than 1 month, then the constant maintenance of updating it, refreshing design and SEO.

Check out envatomarket. You can buy already made high quality store templates and edit with drag and drop on shopify.

What amount of good traffic will it be? I mean is it possible to get, say, 100k monthly visitors within 30-40 days after the launch?

No one can tell you that. It's really up to you and your team.
Once it's done you just have to see what works and what doesn't.
