My second thought is I've never been able to recreate your issue without WiFi dropping. You'd manually have to add back the default route in command line, or have something else running programmed to add it but the odds of that are slim to none.
So the only rational explanation would be your internet connection's dropping and you router is pushing back the default route when it reconnects.
But if the internet connection drops the VPN will disconnect too and you cant miss it. You'll see the window pop open for the VPN trying to reconnect.
