Do you think with the firefox , private broswer mode

that paypal and ebay would still be able to identify you ?

Why would you do that? Cookies, history are important to eBay and PayPal.
Why would you avoid storing those important things?

It doesnt matter, not having constant cookies and changing them everytime is a big red alert,
