I was trying to sign up for alternatives, however do they share the information with ebay?

Be more specific

for instance, they ask for your name, address etc, does that have to match with the ebay account you are using?
Also, they ask for your SSN off the bat... and it has to match your address, do they share that info as well?

It depends on which payment processor you are talking about - stick around and I'm sure one of the Yanks will give you better info than I can
