As long as you don't stay sold out for more than a week or so it usually only takes a few days for a listing to regain the traction it had before selling out. Say you have a listing with 583 units sold, selling ~20 per day. You run out and the listing stays at 0 for a week while you wait on your next shipment. When you get more and add to the listing's available quantity, you may get 3 sales on day 1, 10 on day 2, and by day 3 the listing is just as active as it was before you sold out.
But if you were to leave the listing sold out for a month it would take a lot longer to regain it's traction, if it ever does.
FYI, all of the sellers on eBay you see with 10,000+ units sold are using the out of stock option. Even a company with the best possible supply chain setup sells out sometimes.
