What I’m trying to accomplish is selling on eBay.com anonymously as possible, US sellers don’t seem to have to display there business details and address for the world to see like we do on the U.K. site, so that’s one thing I like. What would be the best set up to accomplish this?

you can ship from a foreign country as long as you state so,make sure the delivery date is reasonable.
you have to consider-what if the buyer wants to return the item,where should he return it too?

Yes, I will state item location as the U.K., shipping will would be reasonable (the same shipping options I currently use to ship to the USA 5-7 days) and I’m happy to accept returns but I AM NOT HAPPY to have my name and address displayed on eBay as I’d be selling high risk items, Also my eBay.com listings would exclude the U.K. ie I would not ship TO the U.K.
Given time eBay will ask you for your VAT number as they are now legally jointly liable for unpaid VAT from foreign sellers supplying from, or storing their stock in the UK.
eBay seem a little laxed at the moment compared to Amazon who demand it as part of the validation process, but once they get their collar felt by HMRC they'll surely follow suit.
Personally, there's no way I would open a US account and use it to ship from the UK if you want the account to last any length of time.
He won't need to pay VAT if he's sending to the US
