When going stealth, how would I provide the documents PayPal ask for after awhile? (Proof of ID, address etc?)

That depends how the account is setup.. if stealth then you have to get 'creative' (I won't go into further details); if an account that is let's say a family member than just supply their documents as required. That's the thing with stealth accounts, you have to be aware that further ID will be required the higher your sales.
