Can eBay and PP see the information you provide to the IRS when obtaining a EIN. They ask for a name and SSN for the person requesting the EIN, can they see this?

They can if they ask to verify it which comes after certain sales.

In my experience if your info matches EIN then they give you the "a-OK" everything good or you get a pop-up confirming under perjury that all info is correct.

Paypal does not see the name + SSN of the EIN applicant under any circumstances. What happens is when your 1st 1099k is sent to the IRS it's either accepted or rejected for not having valid info. If the IRS rejects your 1099k you're asked to fill out a W-9 to correct the mismatching information.

They ARE able to look up an LLC's info if that's the route you take, but the IRS absolutely does not share SSN's with payment processors.
