What kind of tracking info does ebay/paypal require for items worth more than $300? I assume that the full name, address and package weight or similar must be shown online to verify that the package has been delivered?
Or will a regular registered mail proof do it as well (no signature), showing nothing, but that it has been delivered?

I don't consider either of these watertight. Let me give couple of examples from the UK.
I have seen many couriers sign for the item themselves and then hand the item over to the person/clerk. I have seen many couriers make mistakes, even getting the address wrong or being unable to find an address. I have seen Royal Mail not update or even lose signatures or update signatures weeks late.

as long as there is a signature then it will be ok for paypal, so recorded delivery will do as a basic low priced option.
yes there are lots of pitfalls for signed for, my favourite is the dreaded 'buyer too ignorant to collect from depot and denies all knowledge of while you were out card' and thus blames everything on me.....
