Running paypal stealth. Also have a website in my own name & details. Currently taking card payments via Worldpay, but have been asked on a few occasions if we accept payal.
Is it safe to add a stealth paypal to a legit website or will I open up a whole can of worms?

Play it safe, setup a business bank account, and a company in the UK, and setup the paypal in that company (which will represent your business). It will be like a hybrid of stealth/legit business Paypal. Obviously keep in mind IP, user accounts etc. all need to be kept separate as usual.
