To collect tax Amazon requires a TAX ID in your account tax settings. In Canada everyone is limited to a single number per legal entity: Sole Proprietor, Corporation and Partnership (making it 3 total) and is linked to your SIN (Canadian SSN) and you cannot change it unless you go bankrupt (not an option).

What exactly does Amazon do with the tax number I give them?

In Canada you are limited to a single tax number (GST/HST number) per legal entity (3 legal entities in Canada). Sole Proprietor, Corporation (Super complicated, costly, onerous and extremely punitive for US citizens), Partnership (complicated, costly and onerous).

My legit one is linked to my suspended account and the only "legit" method to get one in Canada is to register a corporation which I am no where prepared to do. This would have to be done for each stealth account and if it gets suspended the corporation I registered will become useless.

Do Amazon ask you to enter tax id? Maybe it's just an option but they don't think ask each seller to enter that id

Yes, it forces you to enter a Federal Registration Number for GST/HST collection. If you do not Amazon.ca will not collect tax for you.
