You have a few options:
1) Register for VAT in France so you can legitimately collect VAT without issue. Each marketplace/country is different in regards to tax. Stealth accounts on Amazon.com for example can register an EIN with the state to resolve tax obligations. Supplying an EIN (or VAT in this case) won't necessarily link you unless its been used before in which case you have to register a new business / corp / entity in France and apply for a VAT number to use.
Personally I do not know as much about EU accounts as NA but I know Amazon.com may use your EIN to confirm theres a "MATCH" with the IRS records. I know Paypal does this. EU accounts may involve further investigation by a human eye to confirm your VAT and ownership matches your stealth account. Maybe some EU people can chime in.
2) Create many stealth accounts to disperse sales to stay under 250k and ditch once they hit the limit and get suspended. This obviously is not a desirable route as your accounts will never be "permanent".
