I had an item for sale that was a 6 pack of hats. Upon checking on my listings, I noticed the image changed and it was changed to a 4 pack. The ASIN remained the same. Is there anyway to detect when this happens? Why did this happen?

Any seller can change the image, if you upload high resolution image this will get replaced in Amazon catalogue, Amazon system picks up best image and show them on their site

Problem with amazon is they let sellers change stuff in the listing. So not just you have access,
