I have dealt with this issue foryears and hoping some9ne might k ow hwo to deal with it.
I create a new item for sale on amazon with upc code. Everything fine, then a stealth comes along and the take over the listing, change title, price, images etc.
How do they do this?
How to I avoid them being able to alter the listing?

Do you own/lease the codes? Are they valid ones via GS1 or 'aftermarket' ones ? If it s the latter then there's nothing you can do, if its the former then complain to Amazon.
Maybe look into Brand Registry, again assuming you are the rightful owner/lessor of the barcodes.
I complained to amazon, they said they'll fix it.. they managed to change the category, but the title is still different and the ⊗⊗⊗⊗ sellers are still on it.. I'm not the brand owner, its a valid upc code..
Are you 100% certain that the same UPC was used to create the ASIN ?
I'll wager the ASIN was created using an aftermarket UPC which used to be commonplace on ebay for pennies and are now useless or the original creator of the ASIN leased it legitimately at some point but has now let their subscription lapse.
I've been in the same position as you in the past, creating my own ASINS via a GS1 subscription and Brand Registry was the only was to stop it. It nearly cost me my account when some of my FBA stock ASINS were butchered without me realising.
