I'm wondering if i can hide the items i sell so competition can see what i'm selling, so basically when someone clicks my name to see what i'm selling they can't actually see my items up for sale? that even possible?

No, even if Amazon wanted to do this, how could they tell who is the "competition" and who isn't? All you can do is put the account on vacation, in which case no one can see the listings (nor are they active) until you turn off vacation.
I think if you have several thousands of items in your store, then when anyone clicks on you name to check your inventory, Amazon compels them to search for only particular items in your store since your inventory will be too large to display. I noticed this with very large volume sellers when I tried to check their inventory online.
