Hi PayPal guaranty for 180 days.
For eBay i really thing that will not taking that seriously after 2 years.
Just tell her that even if you purchase the bag from any shop no one will give her 2 years to get back in the shop and wont her money back for any reason.
You dont need to worry for that.

Just tell her nicely, why is she taking that long to realize that that was ⊗⊗⊗⊗ (as she claimed it to be)
And nope, she can't win this case.

If the buyer claims a counterfeit item, AND they paid using a CREDIT CARD via PayPal, it's most certainly possible to open a dispute WELL PAST the 180 day window. In fact, is can be as long as 540 calendar days for VISA/MC and even longer (years) for AMEX users.
VISA/MC/DISC/AMEX have their own charge back rules, and they are a lot more liberal than PayPal. Chargebacks have nothing to do with PayPal, so if the customer initiates a dispute with their member bank.
As far as eBay is concerned, they are unlikely to do much of anything after two years, though. Just kindly explain to this lady that after 2 years there is nothing you really can do about the situation and call it a day.

If she disputes it with her CC, even if her CC allows it this far gone, it won't have anything to do with you. PayPal wouldn't even notify you I'd bet.
I had a buyer from 2013 complain about an electronics item not working around this time last year. 5 year old device and they wanted to complain. Some people don't understand how the world works.

eBay doesn't even give you an option to do that after 30 days. The dispute button disappears after 30 days.

You cannot do that in their site, there's no option to file complaint/dispute after that 30 days period. BUT, you can always call them, and file your complaint. Most especially if they pay via paypal, they can dispute the transaction there easily.

2 years is hella long - you should be able to fight this off easy I'd estimate.

knowing Ebay,it will refuse to do anything for your buyer,Ebay is a fleamarket,MBG money back guarantee is only good for 30 days, many sellers sell used items,if Ebay sides with the buyer for an item bought 2 years ago,no seller would want to sell on EBAY.
Paypal will also stick to its rule,or rather Paypal robot will.
so her only recourse is her cc issuer,if she can file the transaction, but I doubt her cc issuer will approve.
Some cc issuers do have buyer protection, like AMEX gold/platinum cards, but not sure it goes back 2 years.
Or if it is something pricey she won in an antique auction/dealer like Soethby or Christie and it turns out to be a counterfeit and can prove it,

If it comes down to a chargeback, be calm and collective and defend it to the best of your ability. Anything and everything you can do to prove you're right and the buyer is wrong, send it over to PayPal to review.
Other than that, nothing else you can do.
In future, avoid selling anything expensive and designer on eBay. This is bound to happen.

also unless she can prove it is a knockoff, which should be destroyed not returned, else she would have to return it in the same condition, and 2 years have past.
There is a site which would verify authenticity, buyers usually ask the site to review before or after purchase, not sure if a cc issuer would accept its words.
designer items are controversial on Ebay,be it handbag,t shirts, hoodies, jewelry.
someone just asked me to sell Guerlain jicky perfume,I did some research and decline.
if OP loses the chargeback, she will not get her bag back, her payment would be returned to buyer and pays $20 chargeback fee
