There's no trick to bypass eBay categories especially on that one. Thats one of the most dangerous categories. I suggest you to reconsider what you might wanna sell, as lots os scammers lurk there.

list the same software on other categories you'll get some 60% of sales number as you was your item listed on operating system category

You can’t bypass it you just have to wait for the category limits to be removed which doesn’t happen for all categories but happens for quite a few
