Sure you can change categories and then they will hit you with a strike. And I am pretty sure that they not only go by category, but keywords as well. This is a nice way of ebay telling you to stop selling high risk ⊗⊗⊗⊗ sh!t.
I have moved items into a similar or like category without any problems.
Like Rsot said, spread them over several accounts but if you do not have them yet then sit on it for a bit or get more accounts to test the moving to a similar area.
Ive done it as well. I sell Nitrous Kits for cars in the automotive section where there is a limit. I would sell them in the business section which has no new limit under fuel and energy. Never had any trouble. Even the final cost of the item has not changed as I would of expected. Great way to build feedback fast cause selling 10 items a month will take up to a year to remove the limit without calling.

Doing things like that will only cause eBay to add selling limits in these catagories too later down the road.
