Hey everyone, 2 and a half weeks into my stealth account, I reached my seller limits. Usually, they reset every month, but I got an email from eBay saying I successfully sold my first item, does this mean I am doing good for my first stealth account on eBay's terms?

That email is not any indication of the account's performance. It was just Ebay congratulating you on your first sale.

There are two indicators I use to identify if my accounts are doing good (from ebays perspective):

1 - Getting increased selling limits (without asking).

2 - An account selling for 3 months without being flagged up by ebay.

Once those boxes are ticked, I start taking calculated risks with the account.
