Multiple accounts, as everyone has said. I don't know of any other ways of raising limits without calling in (and that is completely unsafe so it's not suggested).
There's often some loopholes...Some items can fit under multiple categories :P But the safest way would just be using another stealth account(s)
For example, I was selling some designer brand brooches/pins and I could post them in:
Clothing & Accessories > Unisex > Unisex Accessories > Other
or
Sports Mem, Cards > Vintage Sports Mem. > Pins
or
Jewellery & Watches > Fashion Jewelry > Pins, Brooches
A few times I did this, list in the "other" category. I was getting 30% lower price than I was getting listing it in the correct place.
I was selling SSD hard drives, at first with new sellers there are category selling limits on these. I place them in the "other" and they sold. But sold for much cheaper than normal.
When a buyers searches for an item they want, they only normally search in the correct place where the item is listed. Since the seller posted in the wrong category, less buyers will see the listing.

Do you know if an account automatically get a 100 item/$5,000 monthly limit when they reach 6 months old?
Cause I'm currently having to buy my Stealth accounts with $5k monthly limits. I'd hope to be able to make my own and perhaps start now & let them age.

Each country where Ebay operates is different. I am only in the US. Some of my US accounts are over 6 months and still have the original 10 items, $1,000 limit. Each account will operate differently.
It's not category limits restrict you is your account restricts you. Create more accounts and you are sorted. Number of items you can sold will be same on any category. I have over 20 accounts now which are selling and I've tried to list few things under different category, not too different but slightly and I had some items removed with the message that it is listed in wrong category. Why risk it? Create more accounts, I see no problem running 50 accounts at all if you keep well organized spreadsheet.
