Adding bank

What happens if you don't add a bank to your account by the deadline given by Ebay?

if you don't add a bank then you won't be able to get paid - eb will keep asking you - deadlines do get extended.

if you owe money though...then restrictions occur

Ok so the deadlines get extended?

My account is pretty new and I want to make sure it's solid before potentially wasting a bank account

Yes deadline gets extended, I would wait max 2 weeks before adding a bank in personal expierience

Are bank accounts really that difficult to come by in UK?

It will always let you add a bank in the future

Sometimes they an ask for extra documents though

Try to add it in before the deadline if you can though always best

I am running multiple accounts, and to answer Saijin UK accounts are not hard to come by in the UK, but I'd rather open as few as possible so would not want to waste one until my account becomes more solid

You will have to add a bank account sometime even if you get suspended, to get the funds held released after 60 days. Just add a savings account to one of your bank accounts.
