Shipping expensive items

I see tons of people posting stories about getting scammed by the buyer after they shipped an expensive item.

What's the best way to ship a $200 item? Insurance, person having to sign for the item, etc. I assume priority mail is the way to go? Any general advice?

tracking and signature confirmation is a must.
And I myself dont sell items over a certain amount to anyone without a certain number of feedbacks. Id rather lose a sale than lose money.
