What's the latest on this?

Is it still doable? Phone is on UK network and will be used in Australia .

What happens about software/whatever, I understand that downloading it, locks the phone again

I know that in the USA there was a recent ruling that jailbreaking a phone does NOT violate the Digital Millennium Copyright Act (DMCA).

Of course, I am not sure about AU/UK.

Yes, it's still doable. The old OS is easier to do, but if you want to do the 4.0OS I suggest you wait a little till it becomes more common.

It's extremely easy to do depending on your firmware version. Anything below 3.1.3 is extremely easy to jail break. Again, at the end it all depends on the firmware version you have.

I unlocked and have successfully jail broken three iphone 3G S which I was reselling. I suggest you look on youtube, there are MANY helpful tutorials. I can even recommend you one, but like I said, it all depends on your firmware version.
