First off, renters insurance MAY NOT COVER YOUR INVENTORY! They COULD say that since the premesis was being used in a business, they won't cover anything related to the business. I'm not saying that ALL policies are like this, but you want to ask your insurance agent and be truthful about what you are doing. The last thing you want is to find your inventory stolen or burned up and that you have no coverage for it.
As to whether the one bedroom will work, it depends on the size of the apartment. I grew up in Chicago, and there is a HUGE variation in sizes in these apartments. The apartments built back in the day (before 1950 or so) are HUGE and the more modern apartments tend to be much smaller. When looking for a place, you should maybe look for a 1 bedroom with a lot of closet space, or that is a LARGER 1 bedroom. If these are not available, I would go with the 2 bedroom.
I once rented a storage space for my inventory and it is NOT FUN to have to run back and forth. I would avoid that if at all possible, unless it is your ONLY alternative.
