So I got an ID from easystealth.us and put the stealth info on the account and it was approved. I did not remember the birthdate so I just made one up

My account is no longer restricted!

They asked for an ID to verify me. Should I just send in my real ID that matches the current info on the account? No longer stealth now

What from most people have experienced, your best chance is to use your real name and SSN and DOB. You may be able to convert future accounts with the same info and different business and EIN, but...
