Exceptions-
Only use the eBay/PayPal apps if they only come into contact with one account - including other accounts signed into on the apps, safari or even on the same wifi network. This is impractical for stealth as you should have as many stealth accounts as you can manage.
The reason for this is because the apps are constantly connected to eBay / Paypal so that you can get those alerts when an item is ending or your outbidded etc. If your phone is on wifi, and your using that wifi network on your stealth pc, the app will link every account you access. I *think* the apps can also share more info to ebay too like your phone number / icloud account.
Don't browse any ebay / paypal websites on safari.
You can add all your gmail accounts to the phone so you know if you need to log on on your stealth computer, but you should change your notification preferences in both ebay and paypal settings to text only, instead of html.
Then on your phone, in mail settings, select not to automatically load remote images. The reason for this is that some of the remotely loaded images in the email are unique to that email, so ebay / paypal can track where the emails are opened. Text only instead of html ensures no other tracking methods can be used within the html script.
On each email you receive, there will be a button at the bottom to load the images, never press this on an email from ebay or paypal, but its there to make your other emails normal.
If you use your iPhone for tethering, simply turning flight mode on and off should reset your IP. Quicker than rebooting a router! But again if you have the apps then don't bother as you'll link regardless.
In Summary
If you have a real eBay account (usually for buying / selling personal stuff like your dining table, car, etc), use the apps (or safari) for this, but only if you have a dedicated stealth computer with its own dedicated internet connection such as a 3G dongle, NOT YOUR TETHERED IPHONE! And never use your phone for anything stealth related, including searching for your items you have for sale.
Gmail only if text only and no remote images.
