I'm thinking maybe adding a 2nd or 3rd line to our existing main line is a lot more affordable and cheaper nowadays?

Use a phone number and then add it to your Authenticator app. That way you’ll always login with the Authenticator code and not the pin

I deleted cookies by accident from my firefox browser . Now I am being asked for phone verification to sign in. My phone number is long time dead.

Is there a way to restore the cookies or update phone number with amazon ?

What are my options ?

You should see an option for lost two-step device, you will need to submit an ID to prove account ownership and to change two-step device details

small suggestion: don't use SCAN option when add account details into auth application. Better is to write down string to somewhere, so in case you'll lost access to phone with auth application, you'll be able to easily add 2nd factor to any other phone with auth application installed.
